playing with food and without trying too hard

While many newer Japanese restaurants
have focused on niches such as robata
cooking or oden, Chiba-ken takes a broader
approach. Sushi is its mainstay, but those
seeking variety will also find grilled and deep-
fried specialties. In spite of its Waikiki
address, Chiba-ken can be affordable if you
stick with rolled sushi and a few appetizers
and grill items. A menu of daily specials is
always worth checking. Always seeking ways

"This charming restaurant modest is in size,
but huge in flavor and value. The owner is a
native Japanese, who recently left successful
restaurants in San Francisco to start up a
new challenge in Hawaii. There is a variety of
sushi and sashimi which are made up of
only the highest quality hand chosen quality
fish. The hot items offer a variety of things
from yakitori chicken skewers to traditional
holsum dishes like the Okinawan "goya
champul (a dish of sauted bittermelon, pork,
tofu, and eggs)". Both the sushi bars have
daily specials featuring creative and hard to
find sushi items and traditional dishes.
There are a all types of sake, wine and beer
to pair with anything. The dress is casual
and the staff is friendly and polite. Overall, it's
a great place to get high quality and very
traditional Japanese cuisine, without paying
a huge price for it."

"Is there anything better than sushi? Only
sushi made like it’s supposed to be made,
like Chiba-ken makes it, which is perfectly
bite-sized with just a tiny mouthful of rice
under a slice of fish you don’t have to gnaw
in half to get down. Very little in the food world
is as annoying as having to cram an
oversized Nigiri into your mouth like a
squirrel with too many nuts to take home. But
Chiba-ken’s sushi and Nigiri are gloriously
proportioned, no cramming necessary. The
Ichikawa combo ($17.50), good for two
people or one outrageously hungry person,
comes with all the favorites: six small “spare
tire” tunas, and one each of Aji, salmon,
yellow tail, mackerel, shrimp, octopus and
flying fish row. The fish is all fresh, even the
pungent mackerel, and the Aji in particular is
deep pink and tender."

" Okada-san is the owner, anything you eat is
definitely going to be super delicious. Don't be
afraid to splurge a little and order the good stuff
I could sit there all night eating Uni and
hotatae.. And maybe some Tsukune or
Karage.. ooo.."
"This is my all time favorite Japanese
restaurant in Hawaii. This place is known for
sushi, so try it. Negitoro - awesome. Ikura -
delicious. Uni - freshest I have tasted in
Hawaii."
"The atmosphere was great - minimalist
Japanese, with a local surf-inspired touch. We
ordered maguro, chu-toro, toro, hamachi, Uni,
plus a bunch of appetizers. The fish was fresh,
the Uni sweet, portions were good and prices
were reasonable."
"If you're not into sushi they still have plenty to
offer. Every time we go to Chiba Ken we order
the Hamachi Kama, it is super-dooper! The
steak is also great. If you want salad, order the
Chiba Ken Salad, it is also very good. The
quality of teh food is the star at Chiba Ken."

"For those of you who find yourself in need of
some delicious, authentic and
competitively-priced food in Waikiki, for the love
of all that is good in this world, go to
Chiba-Ken! We went there twice; the first time
we ordered the Chicken Karage &
Tonkatsu--which came with soup & salad--and
an order of California rolls. The Karage was
perfectly fried, tender on the inside; the panko
coating on the tonkatsu defies
words--delicious! Oh! And the California rolls
are made with REAL CRAB. 'Nuff said.
Second time around I ordered the "special"
sashimi plate; prices range from $15-$100.
For $15 I had about 12-15 perfectly-sliced
maguro, salmon, & hamachi."
"The hire katsu (pork tenderloin fried cutlet)
then came out. This is probably the best hire
katsu I have ever had! The pork was so moist,
soft and juicy. I've had hire katsu at places in
Japan and this made more of an impression
on me than those."
